Did you know that what you eat can make a huge impact on how you feel? It is proven a healthy diet can help counter the impact of stress by strengthening the immune system and reducing mental/emotional tension aka stress. With that said during this time of uncertainty we wanted to send a few healthy, yet scrumptious recipes your way! Below, you will find the links to some of our favorite nutritious recipes and under each link we will include our own personalized tweaks, our favorite ways we devoured these eats, along with pictures of the process! This gluten-free hummus is packed with flavor. We added an additional splash of sea salt and lemon juice to the last of the blending process to punch up the flavor. Enjoy this with fresh veggies, crackers, or a Mediterranean bowl! So delicious!
We loved how versatile these "cookies" were. These gluten free, vegan babies fueled us on a couple hikes, we also had them with a cup of Joe in the morning with zero sugar rush following and even enjoyed them frozen for a late night snack. We added an additional 1/4 cup of raisins, sprinkled the tops with coarse sea salt and pressed them with a fork before baking. Healthy and naturally sweet - YUM!
The Coalatree crew knows a thing or two about granola, and this is by far the best. This gluten free, vegan recipe is the perfect crispy, sweet-salty, low carb snack. We also enjoyed it for breakfast with almond milk or atop greek yogurt! (Or some ice cream if you're feeling like it's time to splurge.) We used large coconut flakes instead of shredded coconut, salted dry roasted mixed nuts chopped instead of raw nuts, and before popping them in the oven we sprayed the tops with additional coconut oil, a drizzle of agave, and a dash of sea salt to give them added crispiness and to ensure we got our sweet-salty fix.
